A distillery dedicated to creating the smallest environmental footprint possible: nearly all of the equipment has been recycled, reclaimed, refurbished, updated, upgraded or overhauled from existing equipment. A few exceptions include the 250 gallon custom hybrid still, handcrafted by Vendome Copper and Brassworks of Louisville, KY.
Grain is sourced from several family owned farms in the Hudson Valley, the Catskills and the Finger Lakes. All production of spirits happens in Beacon, NY, from milling the grains through distillation and barreling. Spent grains are picked up by local farmers to use in the feed of their farm animals.
Water is sourced from local Hudson Valley reservoirs, lakes, rivers and ponds before being filtered with reverse osmosis. Grains are not separated from the resulting wash. Denning's Point develops and propagates their own yeast at the distillery. Spirits are barrel-aged in a combination of 10 gallon, 30 gallon and 53 gallon charred American Oak barrels.
