Founded in 2008 on a third-generation apple farm in the valley that stretches between the Catskill and the Berkshire mountains, 4 miles east of the Hudson River. Harvest Spirits Farm Distillery utilizes a 100 gallon German copper pot still. Apples are pressed all year round on an antique rack-and-cloth cider press. The variety of apples used are washed and inspected before being crushed and pressed.
The resultant sweet cider is pumped into large stainless steel tanks where yeast is added. The yeast promotes fermentation and the sweet cider turns into hard cider, about 6% alcohol. After two distillations applejack, whiskey and some brandies are aged in second-use oak boubon barrels. All products are filtered and bottled by hand on site.
